Sweet Potato or Yam Salad

1-2 yams or sweet potatoes
Scrub and tidy up the potatoes, peeling as necessary. Cut into small chunks. Place in a glass or ceramic batter bowl and cover with a glass or ceramic plate or lid. Cook in microwave 4 - 6 minutes or just until tender when pierced with a fork. (usually 3 - 4 minutes per potato) Allow to cool a bit and then combine yams, celery, onions, coconut, pickles, and cheese in a beautiful bowl. In glass measuring cup, combine mayonnaise, pickle juice, vinegar, salt, and pepper. Whisk to make a dressing. Pour over potato mixture, toss, and serve over green leaves. Raisins and / or chutney are also great tossed into this.
