Yam Salad

1-2 yams or sweet potatoes
1-2 ribs celery
2-3 green onions
1/2 cup unsweetened coconut
1-2 tablespoons diced sweet pickles
1 cup gouda cheese, diced
1/2 cup mayonnaise
1 tablespoon sweet pickle juice
1 teaspoon sweet aged balsamic vinegar
1/2 teaspoon fine sea salt
1/4 teaspoon freshly ground white peppercorns
lettuce or spinach leaves

Peel potatoes, cut into small chunks. Microwave, covered, on high using 4-5 minutes as a guide. Cook just until tender. Combine yams, celery, onions, coconut, pickles, and cheese in a beautiful bowl. In glass measuring cup, combine mayonnaise, pickle juice, vinegar, salt, and pepper. Whisk to make a dressing. Pour over potato mixture, toss, and serve over green leaves. Raisins and / or chutney are also great tossed into this.
