Sweet Potato or Yam Chips

2-3 sweet potatoes or yams, peeled and sliced thin
corn or peanut oil
sea salt

Wash, peel and slice potatoes. Pat dry between paper towels. Set aside. Heat oil in saute pan (about 1/2 inch depth). Heat oil to about 350 degrees, using a deep fat thermometer to check. Cook about 6-8 slices of potatoes at a time until browned and starting to crispen. Drain on paper towels. Sprinkle with salt and serve.
