Grilled Red Pepper Sandwich

From Dorothy McNett's recipes at Yet another vesion of the ever-popular grilled cheese sandwich!

bread slices
1 tablespoon mayonnaise
1 teaspoon prepared mustard
grilled or roasted red, yellow, or green bell peppers
thin sliced salami or ham, as desired
thin slices fontina or gouda cheese
sliced green onions or chives

Butter each slice of bread on both sides. In a small bowl blend the mayonnaise and mustard. Spread it over the inside slices. Arrange slices of roasted peppers and salami, adding cheese, onions or whatever as desired. Place top slice over all. Heat skillet or griddle to medium. Add sandwiches and gently grill on both sides, about 2-3 minutes, or until bread is toasted and sandwich is melty and wonderful.
