Holiday Almond Loaf

From Dorothy McNett's recipes at www.dorothymcnett.com from daughter Alison Anton. If you can't find fresh raw soybeans (edamame), look in the frozen vegetable department.

1/2 cup raw soybeans, shelled and soaked in water (aka Edamame)
1/2 cup water
1/2 cup raw almonds
1/2 cup sunflower seeds

1 cup hot water
1 cup cooked brown rice
1 onion, chopped
1 cup bread crumbs
1/2 cup chopped celery
1 teaspoon fine sea salt
freshly ground white peppercorns
1 teaspoon dried marjoram

Soak the soybeans (edamame) in the water about 15 minutes. Preheat oven to 350 degrees. In blender or food processor, whirl almonds and sunflower seeds. Dump into batter bowl. Repeat with the soaked soybeans and and the soaking water. Add remaining ingredients to bowl and let stand a few minutes. Press into oiled loaf pan. Bake 60 minutes, or until a knife inserted in the center comes out clean. Serve as the main dish, sliced, with cranberry sauce and also onion or garlic sauce, or a cheese sauce, as desired.
