Teleme with Truffle Oil

From Dorothy McNett's Recipe book at This is wonderful with Chianti, Sangiovese, as well as Pinot Noir.

flat bread or pizza crust
olive oil
coarse sea salt
Teleme cheese
white or black truffle oil
some shaved black truffles (optional)

Preheat oven to 400 degrees. Brush crust with olive oil and sprinkle with coarse sea salt. With sharp knife cut into desired shapes. Place on baking sheet and bake about 8-10 minutes, or until crispy. At serving time, place the cheese on a beautiful platter and drizzle with drops of truffle oil. Shave some truffles pieces over the top. Arrange crisps around the cheese and serve.
