Winter Fruit Hot Compote

From Dorothy McNett's recipes at And of course, you can serve this fresh and cold. Just leave the butter out and arrange and serve as a refreshing salad/side dish for brunch.

3/4 - 1 cup dried prunes
3/4 - 1 cup dried apricots
3 - 4 medium bananas
1/4 - 1/3 cup raisins or currants, or both
zest and1 cup fresh orange juice
3 tablespoons honey
1-2 tablespoons unsalted butter

Soak prunes and apricots in warm water or brandy about 30 minutes. Preheat oven to 350 degrees. On a big flat pottery dish arrange banana slices, prunes, and apricots. Sprinkle with raisins. Whisk together orange juice, orange zest and honey. Pour over the fruit. Dab with butter. Bake 30 minutes. Serve warm. Great for breakfast with scones or oatmeal.
