fresh mozzarella cheese (packed in water)
Slice the mozzarella into 1/4 inch slices. Wash and spin dry the lettuce leaves. Wrap a stack of about 6 in kitchen towel or waxed paper and microwave on high 1 minute, or enough to wilt them so that they can be folded without breaking. Cool. Place a piece of cheese on each leaf, wrap up tightly. Brush with olive oil. Grill on stove top grill or in a skillet several minutes, or until the cheese gets melty. Spread a very thin layer of tomato mixture over a serving plate. Place the bundles on the sauce and serve. Can be a finger food for a casual event, but is always better on little plates with picks or forks. Also, the bundles can be cut in half for easier serving and eating.
