Harlem Sweet Potato Pancakes

From Dorothy McNett's recipes at www.dorothymcnett.com. Sort of like one of the many street vendor foods used to wrap up cheeses, etc. Also great served as a breakfast or brunch main dish, or use as a bread side dish to serve with a steak or seafood dinner. Drizzle with some spicy sauce or honey, roll up (or not) and enjoy! Great served with Coney Island hot dogs, etc.

1 cup cooked, mashed sweet potatoes or yams
1/4 cup unsalted butter, melted
2 eggs
1 cup milk
1 1/2 cups all purpose unbleached flour
1 1/2 teaspoons baking powder
1/2 teaspoon sea salt

assorted cheeses (Fromage Blanc Honey Lavender, New York....Ashbrook Vermont artisan Cheese, Vermont)
honey for serving like a Harlem street food

In a mixing bowl, combine the mashed sweet potato, melted butter, eggs, and milk and blend until the mixture is smooth and uniform. Add the flour, baking powder, and salt and stir to combine well. Preheat a griddle or skillet over medium-high heat. For each pancake, ladle 1/4 cup of batter onto the heated griddle and cook until golden brown. Flip the pancakes and cook the other sides until brown. Repeat until the batter is used, keeping the finished pancakes warm. Serve with cheeses and honey, hot dogs, etc.....
