Baked Apple With Cherries and Walnuts

2 tablespoons freshly squeezed lemon juice
1/3 cup dried cherries
3 tablespoons chopped walnuts
1 teaspoon grated lemon zest
2 tablespoons raw sugar

6 apples, cored

Preheat the oven to 375 F. Lightly brush a baking sheet with sides, or casserole dish, with olive oil. In a bowl, mix together the lemon juice, cherries, walnuts, lemon zest, and brown sugar. Place the cored apples on the baking sheet or casserole dish. Fill each apple with 1 1/2 tablespoons or so of the cherry-nut mixture, pressing it down into the center with your fingers. Bake until the apples are soft, about 30 to 40 minutes.
