Orange Salsa and Bean Picante Salad
From Dorothy McNett's recipes at www.dorothymcnett.com. A central California favorite, and one of the first salads like this that I experienced after my move from Iowa to California many years ago. This is a great companion to pizza or calzones to make a complete meal!
2 large oranges, or 4-5 tangerines cut into chunks
1-2 ripe avocados cut into small pieces
1/2 red onion, finely chopped
zest of 1 lime
2-3 tablespoons lime juice
1-2 jalapeno peppers
3-4 sprigs of fresh cilantro
1/2 teaspoon sea salt
freshly ground peppercorns
lots of fresh crispy greens, as desired
1/2 - 1 cup cooked pinto or black beans
In a large salad bowl, combine orange or tangerine pieces, avocado, onion, zest and juice of the lime, peppers, cilantro, salt and pepper. Toss in the lettuce, adding your choice of cooked beans. Serve!
