Baked Johnnycakes

From Dorothy McNett's Recipe Book at These are great for breakfast...also after school snacks. Why not serve with homemade peanut butter and a good quality jam or apple butter? And, gluten free, as well!

2 cups water
1 cup instant polenta
1 tablespoon unsalted butter
1/2 teaspoon fine sea salt

maple syrup

Preheat oven to 400 degrees. In glass or ceramic batter bowl, combine water, polenta, butter and salt. Cook in microwave uncovered for 4 minutes. Use a non-stick baking sheet pan or line a regular one with parchment paper or a silicon baking mat. Using a large spoon, dollop out 6 scoops of the polenta, shaping in rounds and making an indentation in the center but not all the way through. Bake 20-25 minutes. Serve hot with butter and maple syrup in the center.
