Settlers Pudding

From Dorothy McNett's recipes at Dessert or side decide!

3 cups milk or half and half
1/3 cup molasses or sorghum
1/3 cup cornmeal
1 egg, slightly beaten
1/4 cup raw sugar
2 tablespoons unsalted butter
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon fine sea salt

Preheat oven to 300 degrees. In saucepan with heavy bottom, combine milk, sorghum and cornmeal. Cook and stir over medium low heat until thick, about 10 minutes. Remove from heat. In batter bowl, whisk egg, sugar, butter, spices and salt. Butter a 1 quart casserole and set aside. Gradually stir hot cornmeal mixture to egg mixture. Pour into casserole and bake about 60 minutes. Nice served with a fresh fruit sauce if desired.
