Beef Salad or Sandwich Topper

From Dorothy McNett's recipes at www.dorothymcmett.com. It is a class favorite to pour over a plateful of baby local Monterey County greens. Or bake Biscuits, slice and arrange lots of greens and beef mixture over for open faced sandwiches.

2 tablespoons extra virgin olive oil
1/2 onion, slivered
2-3 cloves garlic, slivered
1-2 ribs celery, chopped
1-2 carrots, diced
1/2 teaspoon fine sea salt
freshly ground pepper
1/2 pound lean ground beef
1/2 cup catsup or salsa, or barbecue sauce
greens and more greens
sliced sandwich buns or biscuits if making sandwiches

Heat oil in heavy bottomed saute pan. Add onion, garlic, celery and carrots. Cook and stir about 5 minutes to cook vegetables so that they are just starting to brown a little. Add salt, pepper and beef, continue to cook and stir another 5-8 minutes to cook the meat. Add your choice of sauce, heat through. This is great with noodles, with rice, with greens, to make a sandwich etc.
