Fried Catfish

From Dorothy McNett's recipes at www.dorothymcnett.com.

1/2 cup flour
1/2 teaspoon fine sea salt
1/4 - 1/2 teaspoon red pepper, chili pepper blend, or paprika
1/2 cup milk (or buttermilk)
1/2 cup cornmeal
1 pound fresh catfish fillets
oil to cover bottom of saute pan 1-2 inches (lard, corn or peanut oil)

Place flour, salt and pepper in a flat dish and mix well. Place milk in another flat dish, and the cornmeal in another. Dip each catfish fillet into the flour, then the milk, and then into the cornmeal and place on a rack to "dry" for about 5 minutes. In meantime, heat enough oil in a heavy bottomed pan to about 1-2 inches depth. When hot enough (365 degrees) add fish and cook several minutes on each side. Serve with Hush Puppies.
