Place milk in another flat dish, and the cornmeal in another. Dip each catfish fillet into the flour, then the milk, and then into the cornmeal and place on a rack to "dry" for about 5 minutes. In meantime, heat enough oil in a heavy bottomed pan to about 1-2 inches depth. When hot enough (365 degrees) add fish and cook several minutes on each side. Serve with Hush Puppies.
