Fish for One or Two
From Dorothy McNett's recipes at www.dorothymcnett.com. This method steam cooks fresh fish steaks or fillets to perfection. Buy only the freshest and best fish, season with wonderful olive oil and fresh herbs, and sprinkle on just a bit of one of the semi-coarse sea salts when done!
1-2 pieces fresh fish fillets or steaks
Wash and pat dry the fish and place on a ceramic or glass plate. If the fish pieces are thin filets, such as petrale sole, roll them up and place with the seam side down. Sprinkle liberally with herbs, pepper and paprika. Drizzle with a little oil and the juice, if using. Cover loosely with a piece of waxed paper. Cook in microwave, using 5 minutes per pound of fish as a guide. One piece usually takes 2-3 minutes......or until fish flakes easily with a fork. Sprinkle with a few grains of unrefined semi-coarse sea salt. Enjoy!
