Baked Rice ( Risgrynskaka )

1 cup rice
2 cups water

3 eggs
4 cups milk
1/4 cup sugar
1/2 teaspoon fine sea salt
1/4 cup butter
1/2 cup raisins, or other diced dried fruits

Combine rice and water in glass or ceramic casserole. Cover, and microwave on high for 5 minutes, then on half power for 10 minutes. Preheat oven to 350 degrees. Whisk eggs very well, then add milk, sugar and salt. Pour into 9 by 13 inch baking dish and blend in cooked rice, butter, and raisins. Bake about 35-45 minutes. Serve warm or cold.
