Turkey Breast Roast
From Dorothy McNett's Recipe Book at www.dorothymcnett.com.
1 uncooked turkey breast
Check the weight of the turkey breast, and then calculate 10 minutes per pound. Place on microwave roasting rack or if using dressing, use a glass or ceramic baking dish that will fit into your microwave oven. Prepare dressing and pile it under the turkey breast. Microwave butter in glass measuring cup on high for 30 seconds, whisk in the soy sauce, paprika, salt, and pepper. Brush all over the turkey and sprinkle with snipped herbs. Loosely cover with a piece of waxed paper or a small Silpat. Microwave on "roast" or 70% setting for the calculated cooking time. Use instant read thermometer to check temperature, it should register around 165-170 degrees. Allow to stand 5-10 minutes. With a very sharp slicing knife, slice into serving pieces.
