Corned Beef and Cabbage

in the pressure cooker

2-3 pounds corned beef brisket
1-2 cloves garlic, slivered
seasoning packet that comes with the beef, or add 1 bay leaf and some peppercorns
3 cups water

1 head cabbage, cut into wedges

horseradish or horseradish mustard

Put brisket, garlic, seasonings and water in bottom of pressure cooker. Place on lid. Heat on high heat until it is at full pressure. (2nd red ring on Kuhn Rikon, or a steady "here comes the train" sound on the Futura. Then regulate the heat (probably medium) and cook for 35 minutes. Release pressure. In meantime, place the cabbage wedges in our microwave "ugly" pot and add about 2 tablespoons of the cooking liquid. Cover and microwave on high 6-7 minutes. Transfer meat to cutting board and with your very sharp slicing knife, put into slices. Arrange the cabbage around it and serve with plenty of horseradish or horseradish mustard.
