Place on lid. Heat on high heat until it is at full pressure. (2nd red ring on Kuhn Rikon, or a steady "here comes the train" sound on the Futura. Then regulate the heat (probably medium) and cook for 35 minutes. Release pressure. In meantime, place the cabbage wedges in our microwave "ugly" pot and add about 2 tablespoons of the cooking liquid. Cover and microwave on high 6-7 minutes. Transfer meat to cutting board and with your very sharp slicing knife, put into slices. Arrange the cabbage around it and serve with plenty of horseradish or horseradish mustard.
