Lavender Madelines

From Dorothy McNett's Recipe Book at

3/4 cup unsalted butter
3/4 cup sugar
5 tablespoons fresh lavender flowers
2 large eggs
1/2 teaspoon vanilla bean paste or pure vanilla extract
1 cup all-purpose unbleached organic flour

Preheat oven to 400 degrees. Microwave butter in glass measuring cup on high for 1 minutes. Set aside to cool. In food processor with steel chopping blade in place, whirl sugar and lavender. In batter bowl with electric beater, beat eggs. Gradually add lavender-sugar mixture and vanilla. Beat about 4 minutes and then gradually beat in the melted butter. Switch to a rubber spatula and fold in the flour gently. Drop mixture into madeline molds. Bake 8-10 minutes or until brown. Cool. Sprinkle with powdered sugar.
