Fried Okra

From Dorothy McNett's Recipe book at Also great with baby shrimp.

fresh or frozen okra
1/2 cup milk
1/2 cup bread crumbs
2 eggs
salt and pepper
olive oil
Creole sauce or other hot sauce, as desired, for serving

Trim okra. In a small bowl put milk. In another one put the bread crumbs, and in another one whisk the eggs with salt and pepper. Heat olive oil and butter to coat bottom of saute pan about 1/4 inch deep. Dip each okra into the milk, then into the bread crumbs, and then into the egg mixture. Fry in the oil and butter mixture just 1-2 minutes. Do not overcook. Serve immediately.
