Rice Paper Rolls

rice paper sheets, softened
Soften rice paper rounds with damp towel until easy to handle and to roll. Make sure it is soft enough, not crispy at all. Arrange leaves, potato, and squid on rice paper, and roll up, folding in the sides first and rolling tightly. Slice each in half on the diagonal and serve with dipping sauces.
