Baked Ham

From Dorothy McNett's Recipe book at www.dorothymcnett.com. Buy a fully cooked whole or half ham, with or without bone.

1 fully cooked ham
olive oil
slivered garlic
whole cloves
paprika

1/2 cup apricot chili jam or preserves

Preheat oven to 350 degrees. With your very sharp boning or slicing knife, slice away any skin and trim the excess fat down to about 1/4 inch. Place it in a roasting pan (no need to use a rack) with the fat side up. Score the ham about 1/2 inch deep making cross hatches at an angle. At the intersections, poke in a whole clove. Combine 1/4 cup olive oil with 3-4 cloves slivered garlic and tuck into the cuts. Sprinkle with paprika. Calculate 15-20 minutes per pound, or roast until meat thermometer registers around 140-150 degrees. Increase oven temperature to 425 degrees. Pour the glaze over the roast. Bake for about 15-20 minutes, or until it starts to brown. Allow to stand about 20 minutes before slicing.
