Shake / Spear Shisk Kebabs (Shakespeare would have loved these!)

1 onion, finely diced
4 - 8 cloves garlic, minced
2-3 big sprigs fresh parsley, minced
1/2 cup extra virgin olive oil (garlic infused is good to use here!)
1/2 cup dry red wine or apple juice
1 teaspoon fine sea salt
freshly ground peppercorns
beef steaks, or leg of lamb meat, cut into 2 - 2 1/2 inch cubes

1 large sweet onion, cut into chunks
1 green or red bell pepper, cut into chunks
10-12 large mushrooms

In batter bowl, combine onion, garlic, parsley, oil, wine or juice, salt and pepper. Add meat chunks and stir to coat. Cover and refrigerate several hours or even overnight. Prepare grill or use a stove-top grill pan. Drain meat, and then shake and spear and arrange on skewers, alternating meat with onion chunks, pepper chunks, and mushrooms. Grill or broil to desired doneness.
