2-4 potatoes or many small fingerlings, etc.
Wash but do not peel the potatoes. If large, slice into 1/2 to 3/4 inch wedges. Place 1 tablespoon smoking chips in the bottom of Stove Top Smoker. Add the drip pan, then the rack. Arrange the potatoes on the rack. Slide on the lid but leave it open just a bit. Place over medium high heat and when the first wisp of smoke appears, slide the lid all the way shut. Cook 20-30 minutes on medium heat. Serve!
