Grilled Tofu Crackers

1 carton extra firm tofu
1/2 cup Spinach Salad Dressing (or other good quality marinade)
2-3 tablespoons olive oil
Miz Sassy sauce
firm crackers such as Neva Betta, or sliced zucchini rounds
parsley

Drain the liquid from the tofu. Slice tofu into 1/4 inch slices and marinate in the dressing or marinade several hours or overnight in the refrigerator. On griddle or saute pan, heat olive oil. Place tofu slices on paper towels to remove excess marinade. Pan fry over medium heat for several minutes on both sides, so that it browns a little. If it breaks up, don't worry. Place a dollop of Miz Sassy on crackers or zucchini rounds. Top with tofu and add a snipping of parsley for garnish.
