Roasted Potatoes

From Dorothy McNett's recipes at

3-4 or more potatoes, or a quantity of fingerlings
olive oil
sea salt

Preheat oven to 375 degrees. Wash potatoes. Pierce the skins with a fork. Brush or rub olive oil over each potato. Arrange on a cookie sheet or or a roasting rack. Sprinkle with sea salt (coarse is good here). Bake at least 40 minutes, and longer if the potatoes are larger. Potatoes should be tender when pierced with a fork. Allow to stand about 10 minutes before serving. Or, for a special treat, place potatoes on a cedar plank and roast as above.
