Roasted Eggplant Slices

From Dorothy McNett's Recipe Book at Great served with salami slices or grilled Chicken Apple Sausages.

1 eggplant
soft butter or extra virgin olive oil

extra goodies: Roasted Garlic and Grilled Tomatoes to put on top of the finished eggplant slices, as well as Roasted Garlic Onion Jam

Preheat oven to 400 degrees. Cut the eggplant into slices about 1/2 inch thick. Spread both sides with butter or drizzle with olive oil. Season with salt, pepper, and paprika. Place on a baking sheet and bake 6 minutes. Turn slices. Bake another 5-6 minutes or until soft. Serve as it, or squeeze roasted garlic cloves over each slice and top with a grilled tomato slice.
