Grilled Tomato Slices

fresh local tomatoes
extra virgin olive oil
fine bread crumbs
herb seasonings

fresh greens for the platter
drizzles of a cream sauce or mayonnaise, etc.
sprinkles of semi-coarse sea salts, such as black lava

Slice tomatoes about 1/2 inch thick. Sprinke with olive oil and dust with bread crumbs, patting them into the tomato slices. Add seasonings. Place on a hot stove top grill pan and cook 1-2 minutes per side or until slightly browned and not too juicy. Some tomatoes will get very juicy, so watch and remove quickly. Arrange fresh greens on a serving platter and top with the grilled tomatoes and then garnish as desired with a creamy sauce or mayo, etc. Sprinkle with just a bit of sea salt if desired.
