Fruit Salad with Honey Dressing

From Dorothy McNett's recipes at

1 cantaloupe or other small melon
1-2 oranges, peeled and cut into sections
1-2 cups pineapple cubes
2 cups fresh cherries, pitted
mint leaves
salad greens

Honey Dressing

1/2 cup extra virgin olive oil
1/2 teaspoon fine sea salt
2 tablespoons lemon juice
2 tablespoons white wine vinegar
3 - 4 tablespoons honey

Cut melon into wedges, remove seeds and peel each piece. Arrange on a bed of lettuce. Pile with oranges, pineapple and cherries. Garnish with snipped mint leaves. In glass measuring cup, whisk together the honey dressing ingredients and drizzle over salad.
