Potato Salad No Mayo
From Dorothy McNett's Recipe Book at www.dorothymcnett.com. You can leave the eggs out and substitute chunks of apple smoked cheese, such as gouda or cheddar.
3-4 white rose or russet potatoes
Cook potatoes in salted boiling water until tender, about 30 minutes. Or, cook in microwave in batter bowl, covered, for about 6-8 minutes or until fork tender. Cool potatoes and cut into bite sized pieces and place in a big bowl. Toss in the cooked eggs or smoked cheese, diced onion and celery. In a measuring cup, whisk together the olive oil, vinegar, mustard, honey, salt, pepper, dill and capers. Taste and correct seasonings to be just right. You may need more salt, more pepper, more sugar, etc.
