Apricot Upside Down Muffins

This recipe is compliments of Norma Martinetti of Hollister. She made these for the Apricot Summit which was held here in our store in July, 2003.

1 box lemon cake mix
1 can apricots, drained but save the juice
brown sugar

6 cups fresh apricots, sliced
3/4 cup sugar
2 tablespoons flour
pinch of salt

Preheat oven to 350 degrees. Follow directions of cake mix for cupcakes. Butter or spray bottoms of cupcake pan and into each one place 1 teaspoon reserved syrup and 1 teaspon brown sugar. Place canned apricot halves cut side down. Pour cake batter on top, filling 3/4 full. Bake 20-25 minutes. Immediately turn out to cool on a baking rack.
