Eggs with Paprika
From Dorothy McNett's recipes at www.dorothymcnett.com. If you have just made an angel food cake, you will have a bunch of egg yolks to use up! So make this using the egg yolks and lots of paprika!
2-3 eggs ( OR 8 - 10 yolks left over from making an angel food cake!)
salt
pepper
extra virgin olive oil
paprika (try various kinds such as smoky, hot, sweet)
In batter bowl whisk eggs with salt and pepper. In small skillet heat oil and add eggs. Scramble the eggs gently. When done to yor liking, place on plate and sprinkle with your choice of paprika. This is a good way to experiment with the various tastes of paprika.
