Potatoes with Flavored Oils

1-2 potatoes
flavored olive oil, such as lemon or garlic infused
feta cheese
sea salt
freshly ground pepper
paprika
Wash and then slice the potatoes evenly and arrange in a glass or ceramic au gratin dish. Drizzle generously with flavored oil. Crumble feta cheese over and tuck some in between the slices as well. Sprinkle with just a little bit of salt, some pepper and paprika. Loosely cover with a waxed paper sheet. Cook in microwave, using about 3 - 4 minutes per medium potato as a guide, or until potatoes are tender.
