From Dorothy McNett's recipes at A simple and wonderful baked vegetable dish using fresh California veggies.

3-4 tablespoons extra virgin olive oil
2-3 zucchini or yellow squash, sliced
1 large onion, sliced
2-3 cloves garlic, slivered
1 long green chili, chopped
2 ears fresh corn removed from the cob (or 1 - 2 cups frozen corn kernels)
1 cup grated Cheddar or Monterey Jack cheese

Preheat oven to 400 degrees. In heavy bottomed pan, heat oil and saute zucchini, onion, garlic, green chili, and corn several minutes to start the cooking process and to blend the flavors. Put in buttered 1 quart baking dish and stir in the cheese. Bake 15 minutes.
