Zucchini with Mint

1 teaspoon raw sugar
In glass or ceramic batter bowl combine sugar, salt, zest, juice, and oil. Heat in microwave 30 seconds, whisk to dissolve the sugar. Toss in the zucchini. Cover. Cook 4 - 5 minutes, or until tender. Snip on the mint leaves and serve. This is also wonderful chilled. The mint is so refreshing.
