Wedge Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. Compliments of Swank Farms of Hollister for use in our television show which featured their wonderful lettuce and tomatoes.

1 head iceberg lettuce
2-3 heirloom tomatoes
1/2 teaspoon fine sea salt
freshly ground pepper, as desired
2-3 tablespoons extra virgin olive oil (infused flavored ones are great here!)
1/2 cup sliced olives (green or black, stuffed or not!)
3-4 oz. feta cheese, cut into chunks or crumbled

Cut iceberg lettuce into wedges. Arrange on salad plates. Cut tomatoes into wedges and then in half for bite sized pieces. Put in batter bowl and add salt and pepper. Drizzle with olive oil. Heat tomato mixture in microwave for 45 - 60 seconds until warm. Top lettuce wedges with sliced olives, feta cheese and then the warm tomato mixture. Add more olive oil if desired and serve.
