Tomatoes on Cheese Bread

From Dorothy McNett's recipes at www.dorothymcnett.com. But of course you can use mozzarella instead of the brie! Can we ever get enough of the tomato, basil and cheese combination when the tomatoes are in season?!

fresh red ripe tomatoes, sliced
French bread or Baguettes, thinly sliced
extra virgin olive oil
fresh basil leaves
Brie cheese (or good quality creamy blue cheese)
coarse sea salt

Slice tomatoes as thin as possible and set aside. Sprinkle each slice of bread with olive oil. Spread soft brie cheese over bread. Arrange some basil leaves over the cheese, and top with tomato slices. Sprinkle with more olive oil and a few grains of coarse sea salt. Serve!
