Salmon with Green Beans

From Dorothy McNett's recipes at

1-2 or more salmon steaks
1-2 teaspoons very fine bread crumbs or flour
fine sea salt
freshly ground peppercorns
1-2 tablespoon butter or olive oil
1-2 garlic cloves, slivered
1/4 cup broth or water
1-2 handfuls of green beans, stem removed

Wash and pat dry salmon. Sprinkle with crumbs or flour, salt and pepper. Heat butter or oil in a heavy bottomed skillet or saute pan. Cook salmon 2-3 minutes on first side, turn over and cook 1-2 minutes or until fish flakes easily with a fork. Remove salmon to serving plates. Add garlic to hot pan and cook several seconds, then add water or broth bringing up any browned bits from the bottom of the pan. Quickly add beans, cover, and cook on medium for 2 minutes. Serve with salmon.
