Radicchio Salad with Aceto Balsamico

From Dorothy McNett's recipes at www.dorothymcnett.com. Only the finest of ingredients should be used for this salad. Don't serve this for large parties, save for intimate dinner parties or of course, just for yourself!

leaves of radicchio (use about 1/2 head per person)
coarse sea salt to pinch on ( a great oppoortunity to offer several of the wonderful sea salts)
drizzles of aged balsamic vinegar (if you have the "real stuff" this is the time!)
best quality extra virgin olive oil
thinly shaved Parmigiano-Reggiano cheese

Arrange the leaves on chilled salad plates. Sprinkle with some salt. Drizzle with the thick wonderful aged balsamic, just drizzles. Add some drizzles of olive oil. Shave the parmigiano with a cheese slicer so that you have thin but fairly big slices. Serve.
