Mashed Potato Casserole

From Dorothy McNett's recipes at www.dorothymcnett.com. A great way to serve mashed potatoes with a holiday dinner as this can be prepared ahead and then baked and it is good served with gravy just like any other mashed potatoes.

3 - 4 medium baking potatoes, peeled
3-4 cloves garlic, very finely minced
2 tablespoons unsalted butter
3/4 cup milk or half and half, as desired
1 cup freshly shredded fontina, cheddar or jack cheese
1/3 cup freshly shredded Parmigiano-Reggiano or Pecorino
salt and pepper

Preheat oven to 350 degrees. (Put in while the turkey is just about done) Butter a 9 by 13 inch pan. In batter bowl place potatoes cut into chunks. Cover. Cook in microwave about 8 - 10 minutes, or until tender. Using a potato masher, mash the potatoes with the garlic, butter, milk, cheeses, salt and pepper until light and fluffy. Scrape the mixture into the prepared pan. Bake 15-20 minutes to brown.
