Cinnamon Applesauce

4-6 crispy fresh apples
1/4 to 1/3 cup sugar
pinch of sea salt
1/2 to 1 teaspoon ground cinnamon
1-2 inches of cinnamon stick
1 tablespoon water or red wine or port

Peel away most of the peeling but leave a little for flavor and color. Core the apples and cut them into wedges. Combine apples, sugar, salt, cinnamon, cinnamon stick and water or wine in a batter bowl. Cover. Microwave on high for 5 minutes. Stir, and microwave another 2-3 minutes if necessary to finish the cooking.
