Red Pepper Dip or Spread

From Dorothy McNett's recipes at

2 -3 red bell peppers, roasted
1 roasted hot chili pepper, if desired
6 cloves garlic
1 cup walnuts
1 1/2 slices bread, use crusts also
zest and juice of 1/2 lemon
1/2 teaspoon cumin
1/2 - 1 teaspoon fine sea salt
1/4 cup extra virgin olive oil

With steel chopping blade in place, process all ingredients adding the olive oil at last. Use enough olive oil to make a dipping consistency. Correct seasonings. Use as a sip for vegetables, for crackers, for spreading on top of cheese, etc. A little aged balsamic vinegar is nice added to this, about 1 tablespoon or so.
