Pepper Preserves

From Dorothy McNett's Recipe Book at www.dorothymcnett.com. Use this like chutney

2 red or yellow bell peppers
2 teaspoons ground dried ancho chilies or Chili Powder Blend
1 teaspoon paprika (try the smoked one from Spain!)
1/2 cup white wine vinegar
1/4 cup sherry or water
1/3 cup brown sugar
1/4 teaspoon fine sea salt

Dice the peppers. Combine all ingredients in clay pot or other ceramic dish. Cover. Microwave on high 5 minutes, then on half power for 15 minutes. Stir. Remove lid. Microwave another 5 minutes to reduce the liquids. Cool and serve with chicken apple sausages, etc.
