Pepper Preserves

From Dorothy McNett's recipes at Use this like chutney. Red peppers can be sweet, and also hot! Get a blend going.

2 red sweet bell peppers
1 small hot red chili pepper, or 1 - 2 teaspoons ground dried ancho chilies or chili powder
1 teaspoon paprika (try the smoked one from Spain!)
1/2 cup white wine vinegar
1/4 cup sherry or water
1/3 cup raw sugar
1/4 teaspoon sea salt

Dice the peppers. Combine all ingredients in glass or ceramic batter bowl. Cover. Cook in microwave 5 minutes, then on half power for 15 minutes. Stir. If necessary cook another 3-4 minutes to reduce the liquids. Cool and serve with cheeses, meats, veggies, etc.
