Caramelized Sugar Syrup

From Dorothy McNett's recipes at www.dorothymcnett.com.

1/2 cup raw sugar
1/2 cup hot water

1/2 cup whipping cream, if desired

In heavy bottomed saucepan or skillet, heat sugar while stirring with a silicone spatula or spoon. Stir constantly until the sugar has melted Slowly and carefully pour in the hot water. Careful, as it will splash and gurgle, just keep stirring until the sugar is dissolved. Allow to cool. Use this as a syrup for desserts, or use as a sweetener for anything you want to have a caramel taste. It is even good added to a hot barbecue sauce when a sweetener is needed. If desired, when syrup has cooled, gently stir in the cream.
