Fish Filets with Pepper Jelly

From Dorothy McNett's Recipe Book at These are a popular Amazing Grazing appetizer for my parties!

1 pound fresh fish fillets, such as snapper, cod or halibut
2 tablespoons extra virgin olive oil
1-2 cloves garlic, slivered
1/2 teaspoon Herbes d Provence or your choice of seasonings
fine sea salt
freshly ground pepper
zest of one lemon
1-2 teaspoons lemon juice

red or green chili pepper jelly
flat bread crackers (crostini or croccotini)

In a glass or ceramic dish that will fit into your microwave place oil, garlic, seasonings, salt, pepper, zest and juice. Microwave on high 1 minute. Stir to blend. Arrange the fillets on top of the seasonings, coating with more oil. Sprinkle with paprika. Cover with waxed paper sheet. Microwave on high, using 5 minutes per pound of fish as a timing guide. The fish is done when it flakes easily. Arrange flat bread crackers around the fish. Spread the top of the fish gently with the pepper jelly, just coating it nicely. Garnish with lemon and parsley. This is fun to serve by putting a little of the flaked fish on a cracker and using this as a finger food for a Grazing Party. Or, simply serve on a platter with the crackers on the side.
