Potato Chips with Spices and Salami
From Dorothy McNett's recipes at www.dorothymcnett.com. Just cook the potato slices this way and serve with roast port tenderloin, as in Love Me Tenderloin!
In large saute pan, heat enough olive oil to a depth of about 1/2 inch. Slice the potatoes, pat dry. Slip into the oil and cook for about 10 minutes, or until browned on both sides, repeating in batches as necessary. As soon as they are done, sprinkle each slice with your selected seasoning. Sprinkle with salt. Serve with bowls of dips and dressings along with the salami.
