Quesadillas as a Soup Companion or Appetizer

From Dorothy McNett's recipes at www.dorothymcnett.com. The garlic infused olive oil is optional as you can use regular olive oil and then scatter some finely minced garlic over the cheese mixture. However, you can make garlic infused olive oil by combining 2-3 tablespoons oil with 2-3 cloves of sliced garlic in a glass bowl and allow to stand several hours.

1 cup diced cooked crab meat or smoked salmon
2 cups shredded mild provolone, fontina or farmer cheese
3-4 green onions, finely sliced
8 flour tortillas
garlic infused olive oil

Preheat oven to 450 degrees. Combine crab or smoked salmon, cheese and onions. Spread four of the tortillas onto baking sheets. Brush with the garlic infused oil. Evenly cover each of the tortillas with the cheese mixture, bringing it to within 1/2 inch of the edge. Cover with the remaining tortillas and press them down a little but do not squish out the filling. Bake about 8 minutes, or until lightly browned. When done, slide them onto a cutting board and cut each into 6 wedges. Serve with chowders or fish soups.
