Brussel Sprouts and Ham Soup or Chowder

From Dorothy McNett's Recipe book at Make it a chowder by using half and half or cream along with the broth. Make it a soup by using only broth, no cream. Tofu is wonderful added to this recipe, as well.

1/4 cup extra virgin olive oil
10-12 fresh brussel sprouts, cleaned and sliced into quarters
1 small onion, chopped
1/4 cup flour
1/4 teaspoon fine sea salt, perhaps more depending on the broth
dash of hot pepper sauce
3 cups chicken, vegetable or beef broth
1-2 slices roasted red bell peppers, or pimiento
3-4 slices Serano ham or Prosciutto, torn or cut into pieces

In batter bowl combine the oil, sprouts and onion. Cover loosley. Microwave on high for 5 minutes. Stir in the flour, salt, pepper sauce and broth, blending well so as not to have lumps in the flour. Microwave on high 5 minutes, then on half power for 4-5 minutes to blend flavors. Add the diced peppers and the diced ham. Serve.
