Brussel Sprouts and Ham Soup or Chowder
From Dorothy McNett's Recipe book at www.dorothymcnett.com. Make it a chowder by using half and half or cream along with the broth. Make it a soup by using only broth, no cream. Tofu is wonderful added to this recipe, as well.
1/4 cup extra virgin olive oil
In batter bowl combine the oil, sprouts and onion. Cover loosley. Microwave on high for 5 minutes. Stir in the flour, salt, pepper sauce and broth, blending well so as not to have lumps in the flour. Microwave on high 5 minutes, then on half power for 4-5 minutes to blend flavors. Add the diced peppers and the diced ham. Serve.
