Chicken Skewers with BBQ Sauce

From Dorothy McNett's recipes at www.dorothymcnett.com. Making skewered chicken is fun and attractive, and easy to barbeque. But you can also just saute the pieces in a pan along with the barbeque sauce, etc.

chicken drumsticks and thighs, skinned and boned
2 teaspoons lemon juice
2 tablespoons flour
1/4 teaspon sea salt
freshly ground peppercorns
1/4 cup good quality barbecue or hot sauce, as desired
snipped fresh chives

Flatten the chicken pieces with a meat pounder to give them an even thickness, and then cut the chicken pieces into evenly shaped pieces. Dip into lemon juice to coat, and then into the mixture of flour, salt and pepper. Heat a stove top grill for indoor cooking, or your barbecue grill for outdoor cooking. Using bamboo or metal skewers, thread the pieces of chicken securely. Place on grill and cook a few minutes on the first side. Turn them and then drizzle with some of the sauce. Continue cooking until meat is tender and done. They will cook farily quickly due to the size and shape. Garnish with snipped chives.
